☼HONEY☼
Often comes the question "Why use honey at all? We want vegan cookies."
Although we do offer an agave sweetened version of our cookies we do still choose to use honey as our primary sweetener. Because we are blessed with access to Gipson's Golden honey this choice comes much easier. Objections to honey primarily include treatment of the bees. John Gipson is far from traditional in his practices. Bees are only fed their own honey (which they produce in abundance-far beyond what is needed for their own consumption) never anti-biotic laced sugar as is done by most commercial producers. As well, at the end of each season John spends much of his time moving the bees to climates that suit their needs, again, very different from the standard practice which typically involves fumigation (ie: killing the bees) at the end of each season.
Here's the magic...Only the honey bee pollinates the almond tree! We find this symbiotic relationship to be Divinely inspired and believe that combining these two ingredients is nature supported wisdom. As well, honey has extraordinary preservative qualities and help to keep the cookies fresh for 3 months or longer.
Onto agave...the most beneficial aspect of agave is that it has quite a low glycemic level. That means it burns slowly in the body, eliminating the energy spike and crash effect other sugars can produce. We use the purest, organic, raw strain from the Blue Agave plant (although the syrup is crystal clear).
Please keep in mind that the shelf life is much shorter than those made with honey. We find them best eaten within a month.
Freezing is a viable option if you need to extend the shelf life. Quality wise, we prefer this over refrigeration.
☼LIGHTLY ROASTED CAROB☼
